HOLY. SNOW.

We got absolutely slammed this weekend with almost 3 feet of snow. All at once. And it was a nightmare to move it.

To be completely honest, I didn’t do much shoveling, thanks to the little guy growing in my uterus, but Matt did quite a bit of hard work all day yesterday to make sure both of our cars were able to move this morning. Best husband!

If you, too, got snowed in this weekend aaaaand you’re anything like us, you’re probably looking to get back on track with your healthy eating after 2 days of eating all the things…

Yeah.

Forget all the fresh produce we had– we went right for all the cheese and the bread and the chips and salsa and yes, we ate an entire batch of Rice Krispies treats that I’m bringing you the recipe for next week.

Ok, I did eat a big salad each day, but Sunday morning was red velvet pancakes. Ahem.

Yeah. Let’s get back on track, peeps.

Healthy Apple Pie Smoothie: Made with good-for-you ingredients but tastes just like apple pie. Naturally sweetened and gluten free!

I made this smoothie last weekend, but I almost whipped it up again this weekend between sticky Rice Krispies fingers and slivers of creamy white cheddar.

I am all about drinking my fruits and veggies, especially when I’m in a rush or looking for something on the sweet side, so this smoothie hits the spot if you’re craving something like apple pie but don’t want to completely ruin your blizzard waistline.

This healthy smoothie has nothing but simple ingredients:

•a large apple (of a sweeter variety– like Macintosh)
•some unsweetened almond milk (you may certainly use cow’s milk if you’d like)
•some plain Greek yogurt
•a bit of oats
•some spices
•a few ice cubes
•and just a touch of honey, if you need it.

Whip it up in a strong blender and you’ll be sipping your pie in no time!

What I love about this smoothie is that it feels hearty, but it doesn’t weigh you down in the slightest. While I won’t lie to you and tell you it’s “just like eating pie,” it’s as pretty darn close as you can get without all the calories. Or an oven!

It’s easy to make, it’s easy to drink, and I’d be willing to bet your kiddos would drink it up in a snap, not even realizing it’s jam packed with good-for-you ingredients.

Blend it up with breakfast or a snack or even dessert. It can cover all the food bases, all day long.

Have your pie and drink it too!

Besides, an apple a day keeps the doctor away… And maybe it will keep more blizzards away too.

Healthy Apple Pie Smoothie

Made with good-for-you ingredients but tastes just like apple pie. Naturally sweetened and gluten free!

Servings: 2 small smoothies

Ingredients

  • 1 large apple I used Macintosh, cored and sliced
  • 3/4 cup unsweetened almond milk
  • 1/4 cup Greek yogurt I used plain, but you can use vanilla if you prefer; any fat content
  • 3 Tablespoons oats
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 3-4 cubes of ice
  • 1 teaspoon of honey if needed

Instructions

  • Add all of the ingredients, except the honey, to a strong blender. This is the one we have. Blend until it reaches the consistency you prefer.
  • Taste the smoothie and add honey, if you desire a sweeter smoothie.
  • Pour into a large glass or two small glasses and sprinkle with extra oats and/or cinnamon, if desired. Leftovers can be stored in the refrigerator, covered, up to 2 days.

    This is SO NEEDED after snow weekend. Sounds like we had very similar eating habits over the weekend (who’s surprised? Not this tastebud twinsie ๐Ÿ˜‰ ) I’m LOVING that this is apple pie in a [guilt-free] glass – just what I need to ween my off all the yumminess of the weekend, but get me back on track for the week. ๐Ÿ™‚

    I am SO jelly! I love snow so much! But winter weather certainly makes me want to eat all the things. I love this creative smoothie, those warm flavours would be divine in liquid form!

    ummmm this looks so delicious! I love smoothies! But we had a mold incident with ours, so now I’m waiting on my mom to buy a Vitamix. As soon as we get it though, I will be making smoothies 24/7, and definitely will try this one out! I hate seeing smoothie recipes coming out and not being able to make them :(. So you had snow too! We got a foot of it, and even that was too much for us. It has been melting though, thankfully! How’s the pregnancy going so far?

      Oh no, a mold incident! That sounds no good at all! I hope you get something else soon so you can smoothie it up like a champ ๐Ÿ™‚ our snow did not do much melting today… I think it will be around for quite some time. WOMP WOMP! Pregnancy has been great so far– thanks for asking! No pain, no discomfort… No symptoms! And I felt him kick for the first time this weekend, so that’s pretty cool! Other than that, nothing to report, but I suppose that’s a good thing ๐Ÿ™‚

    Firstly, even though snow must suck, I am still SOOOOO jealous! I’m so happy that we are going to honeymoon in Japan in the winter so I can finally see snow!
    Secondly, this looks like breakfast tomorrow! So much goodness in one glass! I love the combination of so many cozy ingredients ๐Ÿ™‚

    I am not a huge apple pie fan but THIS looks super good! Glad to know I’m not the only one eating slivers of white cheddar when I should be eating up all the produce. ๐Ÿ™‚

    I’ve had a million smoothies, but never an apple one! This looks amazing! For our snow days we did a considerable amount of snacking too, so this will be perfect!

    Made with a Gala apple, non fat organic milk, no yogurt and some vanilla extract. And Weight Watchers French Vanilla smoothie mix. This was really good.
