HOW IS SOURDOUGH DIFFERENT FROM BREAD?

Sourdough differs from traditional bread in that it is made completely from wild yeast as opposed to commercial yeast. It develops gluten in a slower way and is my favorite way to get more flavor into plain bread. While it takes a little bit of patience and time compared to traditional yeast bread recipes, the result is a more easily digestible bread full of complex flavor.

WHY IS SOURDOUGH BETTER THAN YEAST BREAD?

While "better" is certainly subjective, sourdough can be better for people with insulin or gluten troubles as it contains less gluten and has a lower glycemic index than traditional bread.

Sourdough starter and commercial yeast (active dry yeast, instant yeast, rapid rise yeast, or fresh yeast) are both a form of yeast, and they both leaven bread. The main difference is in the time it takes for them to leaven bread.

Commercial yeast is produced specifically to leaven bread quickly. The yeast you find in sourdough starter is considered wild yeast, and it can take several hours, and in some instances days, to give full rise to bread.
