“LAZY” LASAGNA RECIPE: SKIP THE LONG NOODLES

I know I am not the only one who wants dinner on the table with as little effort as possible. And finding recipes that the whole family will enjoy eating can be difficult. 

This recipe for ravioli lasagna is your solution. 

You might think lasagna is too complicated for a weeknight dinner. But the truth is, making lasagna doesn’t have to be a long, difficult process. If you skip the long noodles (even the no-boil ones!) and pop in some frozen ravioli instead, you will have a filling and super comforting ravioli lasagna on the table in no time (busy night on the agenda? THIS RECIPE IS FOR YOU).

One of the most versatile parts of this recipe is the sauce. You can choose to make your own meat sauce at home, or use your favorite store-bought version. Both options are totally fine, this is all about personal preference and how much time you have.

The other versatile component is the ravioli. You can use ravioli with any kind of filling. Personally, I think it is easiest to use frozen ravioli, and it is also the most affordable option. You can buy fresh ravioli in the refrigerated section at the store which would also work well here, and guess what? You can also use gluten free ravioli and this whole recipe will stay gluten-free. 

No matter what you choose, this recipe is easy, delicious, and perfect for your crew, no matter how big or small.


RAVIOLI LASAGNA RECIPE INGREDIENTS

You only need 5 simple ingredients to make this easy weeknight recipe.

For this ravioli lasagna, you will need:
meat sauce (or keep it vegetarian with a traditional pasta sauce)
• ravioli
• ricotta cheese
• shredded mozzarella cheese
• Parmesan cheese

WHAT TYPE OF RAVIOLI SHOULD I USE?

You can use any kind of ravioli! That is the beauty of this recipe. You can opt for frozen, thawed, or fresh ravioli.

WHAT KIND OF SAUCE SHOULD I USE?

The type of sauce that you use it totally up to you. I like to use my own homemade meat sauce, but you can make it easy on yourself and use your favorite jarred sauce instead. You can make a vegetarian ravioli lasagna by using a meatless sauce, or add meat to your jarred sauce.

CAN I ADD MEAT TO THIS RAVIOLI CASSEROLE?

You can absolutely add meat to this dish. There are a couple options:

MEAT SAUCE: I’ve included below the recipe for my homemade spaghetti sauce which includes meat. If you want to use pre-made meat sauce from the grocery store, you’ll cut down on prep time immensely. 

USE MEAT RAVIOLI: I used spinach ravioli for this particular dish, but you can use a beef ravioli if you’re looking to bump up the protein and avoid using a meat sauce. Of course, there’s nothing wrong with using meat sauce and meat ravioli. This is your dish! Go wild. 

ADD MEAT TO THE SAUCE: if you want to use marinara sauce, you can add Italian sausage, ground beef, ground turkey, ground chicken, or even leftover rotisserie chicken to this recipe. It’s a great way to use leftover meat or add extra protein to the already existing foundation. Just stir the meat into the sauce before proceeding with the recipe. Aim for about 1 and ½ cups of meat. 

HOW TO MAKE RAVIOLI LASAGNA

STEP #1

Spread about ¼ cup of the meat sauce in the bottom of an 8″ x 8″ square baking pan, then layer in half of the ravioli.

STEP #2

Spread half of the ricotta cheese evenly onto the top of the ravioli, then sprinkle about half of the mozzarella cheese on top.

STEP #3

Repeat with another layer by adding half of the remaining meat sauce, all of the remaining ravioli, and all of the remaining ricotta cheese.

STEP #4

Finally, add the remaining half of the meat sauce, then sprinkle the remaining mozzarella cheese followed by the grated Parmesan cheese evenly over the top of the sauce.

STEP #5

Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and bake uncovered for an additional 15 minutes, placing under the broiler for the last 2-3 minutes, if desired.

HOW TO DOUBLE THIS EASY LASAGNA RECIPE

Easily double this recipe and bake it in a 9″ x 13″ lasagna pan instead. This is perfect for when you are feeding a crowd!

CAN I MAKE THIS RAVIOLI LASAGNA RECIPE AHEAD OF TIME?

Absolutely! You can prep and assemble your ravioli lasagna up to a day ahead of time. Simply place the prepped and assembled lasagna in the refrigerator after covering well with foil. When you are ready to bake, preheat the oven and bake your ravioli lasagna. You might need to add a few minutes to the baking time.

You can also freeze lasagna made with ravioli for up to 3 months. Freeze baked or unbaked. Then thaw overnight in the refrigerator before baking unbaked lasagna or reheating the fully baked lasagna.

RAVIOLI LASAGNA RECIPE FAQs

Lasagna is a wide and flat pasta that is traditionally layered with sauce and cheese to create a baked casserole. Ravioli is a square or round stuffed pasta, typically filled with cheese, meat, vegetables, or a combination of some or all of these fillings.

Feel free to use whatever shape of ravioli that you would like! Square ravioli fit nicely into a square dish, but round ravioli would also be fine to use if that’s all you have or can find.

You can certainly make this lasagna ahead of time! Prepare the ravioli lasagna a day ahead of time and store the assembled lasagna in the fridge until you are ready to bake. Freeze your lasagna instead either baked or unbaked and thaw in the fridge overnight before baking.

Ingredients

  • 25 ounces (700g) meat sauce store-bought is fine
  • 24 ounces (680g) ravioli any kind; frozen or thawed
  • 15 ounces (425g) ricotta cheese
  • 2 cups (227g) shredded mozzarella cheese
  • ¼ cup (30g) grated Parmesan cheese

Instructions

  • Preheat the oven to 350ºF (177ºC). Spread about ¼ cup of the meat sauce in the bottom of an 8" x 8" square baking pan, then layer in half of the ravioli.
    25 ounces (700g) meat sauce, 24 ounces (680g) ravioli
  • Spread half of the ricotta cheese evenly onto the top of the ravioli, then sprinkle about half of the mozzarella cheese on top.
    15 ounces (425g) ricotta cheese, 2 cups (227g) shredded mozzarella cheese
  • Repeat with another layer by add half of the remaining meat sauce, all of the remaining ravioli, and all of the remaining ricotta cheese.
  • Finally, add the remaining half of the meat sauce, then sprinkle the remaining mozzarella cheese followed by the grated Parmesan cheese evenly over the top of the sauce.
    ¼ cup (30g) grated Parmesan cheese
  • Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and and bake uncovered for an additional 15 minutes, placing under the broiler for the last 2-3 minutes, if desired. Allow to cool a bit before serving, and serve warm. Store leftovers covered tightly in the refrigerator. Lasagna freezes well, up to 3 months. Freeze baked or unbaked. Thaw overnight in the refrigerator before baking unbaked lasagna or reheating fully baked lasagna.
