In regard to measuring:
I’ve always measured peanut butter by the water displacement method. In other words, for one-half cup of peanut butter: Fill a Pyrex measuring cup to the one- half cup line with water (meniscus) and drop enough peanut butter into the measuring cup until the measurement comes to one cup. Pour off the water. Less mess than other methods! I, too, have a degree in biology (and chemistry)!
