Instructions
Cover a large baking sheet lightly with olive oil. Set aside.
Place the prepared potatoes in a large bowl. Add the olive oil and spices and toss with a spatula or tongs until all of the potatoes are covered. Place potatoes on prepared baking sheet.
Position one rack in the oven to the very top and one to the very bottom.
Set to broil and place baking sheet on top rack. Leaving the oven door cracked, broil potatoes for 5 minutes, or until smaller pieces start browning. After browning begins, move fries around with a spatula every 1-2 minutes to prevent burning. If smaller pieces are cooking too quickly, remove with tongs and continue broiling until all potatoes are done. After all potatoes are browned (approximately 15 minutes total cook time), move baking sheet to bottom rack and bake an additional 2 minutes to help the fries crispen without burning.
Notes
*I used Old Bay, which contains salt. If you're using plain spices, add about 1/2 teaspoon salt.
