I love how easy and versatile this recipe is. I was able to modify it to include things I like (spinach) and I changed to parmesan cheese. And I love the homemade taco seasoning! It adds a little kick. I’ll be keeping that on my shelf all the time now.

I made these for dinner and there is absolutely nothing I would change! I was able to use zucchini and tomatoes from my garden. Such a light but filling meal for a summer night!

Easy to make and delicious. I don’t even like zucchini (except in zucchini muffins where you can’t taste it at all), and I will definitely make these again.
