So delicious! And sturdy and dreamy to work with, but the spices are perfection!

We used the dough for a gingerbread castle and cut out cookies this year.

I have made other gingerbread cookie recipes, but this one tops them all! They are the perfect amount of spice, not too crispy, just the perfect softness!

Over on Instagram, Lynn recently shared the importance of reading the blog part of the recipe instead of jumping straight to it. I’m so glad I read this one to know just how the dough consistency should be.

Also, the tip of using powdered sugar for the work surface was GENIUS! Never going back to flour. Haha

In reply to Amy. Amy! You must try some black pepper! I actually put it in my gingerbread loaf that I made a few weeks ago and it was the same deal... Perfect flavor! Unfortunately, that recipe didn't quite turn out like I hoped it would even after the 3rd time (ughhhh) so I may be posting some gingerbread in the middle of spring or summer. Hahaha. Anywayyyyy, I hope you have a wonderful Christmas Eve! Isn't it midnight there now?? 15 hours, right? I'm always trying to figure out what time it is where you are, haha!

Never had a gingerbread cookie! What a travesty! I’m glad you were there to introduce him to the delight of gingerbread! Your recipe and notes as always are perfect food science and yummy description combined 🙂 Black pepper is really common in Danish cookie recipes too – one of my Mum’s favourites is called pebernodder which is translated as ‘pepper nuts’. I’ve never been brave enough to try it in my cookie recipes but one I’m going to have to give it a try. Love the freezing for sharp edges trick too. Definitely something I should keep in mind in this summer Christmas heat! Happy Christmas Eve Eve 🙂
