Just to clarify, YES, the recipe does say “1 and ½ teaspoons pumpkin pie spice, divided” but then the instructions say to put JUST 1 teaspoon of it in the cookie dough and ½ teaspoon in the coating. I think you might have been following the in-line ingredients, where it lists an associated ingredient with the step. That’s a fault in the system and not something I have control over, SO I separated the ingredients to show “cookie” ingredients and then “coating” ingredients so there’s no confusion moving forward. This made a delightful cookie. I was worried that it would be cakey since so many other recipes claimed to be pumpkin spice snickerdoodles and the reviews said they had a cakey texture, but this one nails it. Perfect texture and a great spice mix to really feel like fall.

I will note that the ingredients list 1 1/2 tsp of pumpkin pie spice (divided), but then the dough calls for 1 1/2 tsp of pumpkin pie spice and the sugar mix to roll it in calls for 1/2 tsp. I followed the instructions rather than the ingredients list, but that did mean I needed to make more of the pumpkin pie mix substitute. I was cooking from the pantry and wasn’t going to put on shoes to get a spice mix I could put together 😉

I originally reached out to Lynn because I saw a boxed pumpkin snickerdoodle cookie mix at Trader Joe’s. It was weird because oil was an ingredient. I’ve been baking for a while and I’ve never seen oil as an ingredient for cookies. Lynn sent me this recipe and it turned out SO good! The spice level is spot on. They’re chewy in the middle with a crispy edge. This is definitely going to be an annual bake!

So easy and so good! I just made a batch of your pumpkin cookies and everyone loves them! I only let the dough chill for 1 hour and they were perfect! Thanks for a great Fall cookie recipe!
