Pumpkin. You had me at pumpkin! Anytime I open a can of pumpkin, I look for recipes that assist me in finishing the can so it’s not wasted. This was where I landed, and I was SO happy to land here! They are so yum-licious, we need to combine words to describe them! Thank you for adding this fall delight to my fall baking lineup!

Yes. Yes to everything about these cookies. The pumpkin seed and cinnamon chip addition is autumn perfection! Pumpkin is such a tricky ingredient for cookies but it looks like you have waved your FAF magic wand and scienced up (science can totally be used as a verb, right?) another delicious creation!
I cannot wait to make these!
Note to self: smuggle home cinnamon chips in my suitcase….

WOWZA, girlfriend. Like you, I am a sucker for any oatmeal cookie and basically anything pumpkin, but then you went and added pepitas AND CINNAMON CHIPS?! There are no words! THIS IS GENIUS! Can’t wait for these to make a (gluten-free) appearance in my kitchen 🙂
