Love this recipe! I randomly found it on Pinterest and decided to give them a try. Super good and they had just the right amount of flavor!! I shared two plates with my local coffee shop baristas and they were so appreciative and loved this fun summer treat!!

Hi, Mary– great question. The bake time is correct. The filling is VERY similar to a custard filling so will need ample time to set in the oven.

I have never seen one that says to put the filling on the baked crust and bake for 70-75 minutes. That seems like a long time. I only bake my pound cakes that long. Most bar cookie recipes I have read with cream cheese on top call for baking for no more than about 30 minutes. I want to make these but I don”t want to over bake them. They sound delicious. I made a coconut custard pie once and used coconut milk and it was very good. Thanks for your help.
