I apologize if you wrote this somewhere and I missed it, can these be frozen after they are baked and still have the crumble and chew once taken out of the freezer? I bake many different cookies at Christmas time to give away as gifts but I do freeze most of cookies I bake to have them ready to all be given away at the same time. I would love to add this to my Christmas cookie tins if possible.

Hi, Mic-- natural peanut butter is much more oily, so the end product may not bake up as intended. We, too, only eat natural nut butters in our house, but I buy "commercial" peanut butter for baking purposes.

Btw - I didn't think that the response was harsh, and can't possibly understand why it was thought to be so.

Can’t wait to try this! We love shortbread and always make it in the round and docked (old family tradition). Adding PB is a whole new level… but will have to try with vegan butter. I’m sure it’ll be amazing!
