Hi, Darren-- I consulted with my fellow food blogging friend Kathleen from The Fresh Cooky who is an expert high altitude baker-- she advises the following: Increase flour to 3 ¼ cups, Decrease baking powder to 3 teaspoons (based on reducing by ⅛-¼ tsp per teaspoon), Reduce sugar to ¾ cup + 2 TBL, Bake at 375 (not 350) and start checking at the lower time frame.

Hope that helps!

This is so fun, Christie! Our older son also gained an interest in marmalade from Paddington. He asks for "marbleade" sandwiches in his lunch often, haha. I'm so glad you found my recipe and it fit the bill :)
