My 5 year old daughter picked these cupcakes to make and we let her assemble the batter with minor assistance and my hubby made the frosting since it was getting late and we wanted to taste them so bad! My hubby was worried the batter was too runny but they turned out amazing! The cupcakes were so moist and the mint buttercream frosting was some of the best my husband has made yet! These were a huge hit for the whole family and I can’t wait to see what my special baker and her daddy whip up next thanks to Fresh April Flours!

In reply to Missy Bockmaster. Hey, Missy, I'm so sorry to hear you didn't like the cupcakes. I just made these a couple week ago for another recipe I'm posting soon, and they turned out perfectly, as written in the recipe. This is the base I use for chocolate cupcakes all the time, so I'm inclined to think something may have gone wrong on your end with ingredients. Regular or instant coffee wouldn't have made any difference. Let me know if you try them again!

I just made these and they are SO GROSS :'( I think I should have used instant coffee instead of regular coffee?!?! So disappointed I had such high hopes. The icing is delicious though, I split it in half and put melted chocolate in half and green food colouring in the other. Would have looked so pretty swirled on top.

Cupcakes definitely bring good luck! Or, as I like to say, you make your own luck, which in regards to cupcakes, happens to be true 😉
Mint chocolate chip is my little sister and her husband’s favourite flavour (even one of their wedding cake layers was mint choc) so I can’t wait to make a batch of these to share with them!
