I’m very excited to give this recipe a try. I live in Florida and quite often it’s very hot here and having specialty treats that doesn’t take a heated oven is wonderful. And I like to keep making these kind of specialty desserts year-round it doesn’t have to be just for the holiday. But I’m also excited because we’re having our craft bake sale the beginning of December and I am trying to find special and new recipes I’ve never tried before. Thank you for sharing this recipe with us.

Made these cheesecake bites for Christmas dinner and they were a hit! My partner is obsessed with cheesecake, but his son is allergic to egg. So we are always looking for egg-free recipes and this one hit the jackpot! We used graham crackers and Oreos for the crust; delicious! Tripled the recipe haha! Just make sure you give yourself time because they do melt in your hands and you have to throw them back in the freezer multiple times.

Ohhh my goodness, that sounds amazing!! I put ginger in the crust for my Key Lime Pie Bars, which sounds similar to what you describe. What a great combination!

These look delicious! We make an unbaked cheesecake with a ginger snap base and lime zest mixed into the filling for a summer treat. Ginger snaps are a staple anytime of the year in our house! Looking forward to seeing your Christmas cookie extravaganza!

These cheesecake bites will be welcome in our house anytime of the year for sure 🙂 My Mama is also a huge fan of gingersnaps so I’ll get lots of daughter points for these 😉
