I make these with King Arthur’s measure for measure gf baking flour and they are delicious. Our (non gluten free) friends compare them to their great grandma’s cookies. 10/10

I have made these multiple time and they always turn out as pictured and taste delicious. I have two children diagnosed with celiac disease, so all my baking is gluten free now. These always turn out great with just a swap with GF all purpose flour and I receive a lot of comments that you can’t tell they are GF. Thank you for another great recipe! I keep these on rotation because everyone loves them.

i made a LOT of Lynn’s cookies for Christmas. This MIGHT be the favorite ( although lemon pepper were also a crowd pleaser!). I have made MANY gingerbread/molasse cookies in the past and stuffed them with brown butter buttercream ( still a fave) and all the things. this marshmallow combo is so good. i didnt think i would have enough filling so i skimped at first, but i had plenty. i did put in the fridge to set the filling so i could cut them into smaller pieces ( easier than adjusting the baking size/time and then everyone grabs little bites). take the time to reshape the cookies, that helps SO MUCH when making sandwiches. My friends have said i can stop making all the other cookies for our swap and just make this one. I look forward to making this one again! well done!

Wow! These are going to be a new tradition… So unique compared to the other go-to Christmas cookies. And Lynn does it again: the most helpful instructions and guidance for these delicious sandwich cookies. I may double the icing next time so there’s more for sampling while smearing….!
