This is a such a delicious and easy meal to throw together, and even my toddler loved it! I doubled it, added some chicken, mixed veggies,, and also added some minced garlic for the health benefits, and it was super tasty! But I’ve made it before with no changes and it was great!

Just made this tonight, and it was delicious. I even went back for seconds. I made it without meat (and didn’t drain or wash the beans because I forgot until after I dumped them in), but I added chicken and avocado to my bowl when I ate it. I’ll be making this regularly now – it’s a new favorite!

This was so yummy!! I sauteed garlic and onion and cooked it in with my toasted quinoa. I also added chicken. So yummy!
