Let me say, as a girl from south Louisiana I am only using Crystal hot sauce or Louisiana Hot Sauce. Loads if flavor with little heat if any. I am very heat sensitive!

What makes this recipe so great is that there are a variety of ways to use this chili. I used it over rice in a tortilla as a burrito, it makes a great cheese enchilada topper, and goes surprisingly great with pasta. I used a buffalo sauce rather than hot sauce (the only real difference between it and franks was paprika, but the recipe calls for it anyways). The only way I would vary the ingredients would be either A: Use fresh tomato and chilis for hear (something below jalapeno or poblano for its flavor) or B: Use your favorite sauce and then add El Yucateco (habanero based hot sauce) for the heat. This recipe is good with heat!

Hi Carol, we usually have generic, store brand hot sauce on hand, but occasionally will buy Frank's RedHot Buffalo sauce (mild). Either one will be fine!

Cheese and guacamole take this chili from great to greater... Seriously! I have never tried this chili without the chicken, but I'm sure it would be just as tasty. I love all the veggies that go into it, and sometimes, I double up just because! And if we're being honest.. The seasons don't matter to me. I've been known to make this in the dead of summer. But this is coming from a girl who likes her coffee practically boiling even when it's too hot outside to leave the house ;-)

I know a tall, ginger haired man who is going to love love love this chili! He is chicken mad so I know this is going to be a favourite :)
I may just have to break the 'chicken, always, chicken' rule and leave it out of mine so I can enjoy a big bowl veggie style - with a huge dollop of guacamole and a hearty sprinkling of cheese thank you very much!
We're having a rainy end to summer here, so I think I might have to pop a pot of this on over the weekend to make dinners easy next week :)
