UMMM, WHAT?! How have you never had buffalo ANYTHING?! Amy. You haven’t LIVED! But you’re right, this would definitely be just as lovely with chickpeas… And I think you need to track down some buffalo sauce ASAP to try it! Also, so sorry to hear about the blue cheese, haha. Feta would certainly be a great substitute!

I make buffalo wings (pre-marinated from the deli) for Chris sometimes, but I’ve never tried buffalo anything myself! Is that a crime? Please still be my friend!
I bet this salad would be just as awesome made with chickpeas instead of chicken (and I love that its already gluten free!), and maybe some feta instead of blue cheese (traumatic blue cheese memories leftover from a Danish childhood…).
Yum! I love recreating my favourite takeaway salads at home, and now I’m super inspired by your creation too! TV, salad, and cute partners really are all a girl needs to get her racing home super quick 😉
