These bars are delicious. I see that in order to use a 9 x 13 pan, you double this recipe. Has anyone ever tried just using this recipe as written and using the 9 x 13 pan, rather than the 9 x 9? The shortbread crust seems a little too think in the 9 x 9 and I have a hunch it would be just right in the 9 x 13. I realize that the baking time would need to be adjusted. Thoughts?

I made these for my daughter’s birthday, she’s not into cake. But she is dairy free. I used Earth Balance buttery sticks for butter, Tofutti vegan cream cheese for the cream cheese, and an oat milk yogurt. They came out fantastic! Please consider putting dairy free options in notes if possible.

This recipe was so easy and incredibly delicious!! I used fresh picked mulberries instead of blueberries because I had a bunch and this flavor profile complemented them so well. They’re obviously not as lemony as a lemon bar, for example, but it is exactly what I was looking for to brighten up the flavor of the berries. The texture of these bars is phenomenal, and I can see it being amazing with any berry! I will definitely be coming back to this recipe again and again. Thank you for sharing such a yummy recipe with the world!!
