Hi, Aris-- I would use my no churn peanut butter ripple ice cream as a guide and just turn it into a no churn base! Obviously don't add the peanut butter, or maybe you want to! Because that actually sounds so yummy. Anyway-- let me know if you have specific questions, but it should work the same way and turn out great!

Hi Lynn,
I don't have a mixer, so I was going to try chilling the batter in a medium stainless steel commercial kitchen pan. It's about 2 in tall and 8x9 l&w. Taking the batter out and mixing with a hand mixer every two hours, should this work to set the ice cream but also achieve a creamy texture?

The basic recipe is delicious, and so creamy! The roasted bananas really made a difference. I goosed it up a little with a few shakes of cinnamon and a tablespoon of good bourbon that enhanced the roasted bananas even more. I mixed the ingredients with a hand blender and found that the result was almost a dessert on its own (like a loose pudding). I'll be keeping this recipe on file!

I modified it like this the second time and it kind of tasted like a cinnamon banana fritter:
Before roasting the bananas, gently steep half of the milk (keeping the rest in the fridge along with the cream) with 1 ½ teaspoons of cinnamon powder until fragrant, and then take off of the heat. Slowly stir into the cream + the rest of the milk in a bowl or quart sized measuring cup and put back in the fridge.
The rest of the recipe is normal, unless you want to add a teaspoon of instant espresso powder blending which is also really good :P

This is a keeper for sure! Sometimes I substitute rum for vanilla and have also added toasted pecans. I find it just as creamy as those that start with custard bases and way simpler to make !
