Although I can’t say that I’ve been spending all that much time outside lately, I can say that I know it’s damn hot. I’ve taken my fair share of walks with our little guy this summer, but there’s no way I can stand more than about 30 minutes, and don’t even get me started on venturing outside in the hottest hours of the day! Super hot temps do not make me want to turn on my oven, so I’ve rounded up the top 10 recipes from my blog that do not involve baking. Two of them require a stove top, but I promise, it’s worth the short hot time!
No Bake Mint Chocolate Chip Pie: originally made for Pi Day and St. Patrick’s Day, but nothing says “refreshing” like the cool combination of mint and chocolate. It’s almost like an ice cream cake/pie, but made with creamy cream cheese and whipped cream. Light, fluffy, and perfect for summer!
Buffalo Blue Salad: a copycat recipe of my favorite chain salad restaurant. Spicy buffalo chicken, tart banana peppers, juicy tomatoes, and creamy blue cheese. A favorite all year round, but especially when fresh produce is available!
Creamy Buffalo Hummus: while we’re riding the buffalo train, hummus is so easy to make at home, and this buffalo hummus will have you dipping anything you can think of in it just to get it in your mouth. No judgment if you’d like to eat it with a spoon. BONUS recipe— Homemade Pita Chips!
S’mores Fudge: all the s’moreness without the fire.
No Churn Peanut Butter Ripple Ice Cream: for peanut butter lovers and ice cream lovers alike. No shortage of crunchy ribbons of peanut butter in this tasty treat!
Chocolate Chip Energy Bites: perfect for on-the-go snacking and what I like to call “purse snacks.”
